Assamese Fish Fried Rice

  • 2 cups Rettai Kili Basmathi rice cooked
  • 1 cup Firm white fish deboned cut into half
  • 1 Onion chopped
  • 2 tablespoons dry coconut (kopra)
  • 1 tablespoon Coriander Powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 inch Ginger chopped
  • 1/2 cup Green peas
  • 1 Carrot
  • 1 Bay leaf (tej patta)
  • 1 teaspoon Lemon juice
  • Oil as needed
  • Salt to taste

Instructions

STEP 1: Cut the fish into 1-inch pieces. Mix coriander powder, turmeric powder, cumin powder, and ginger in a bowl.  

STEP 2: Heat oil in a frying pan, add the masala mix and fry on low flame until the raw smell goes off. 

STEP 3: Add the fish pieces to the masala and stir without breaking them. Cook the fish for 5 minutes on low flame. Now remove the fish and set it aside. 

STEP 4: In the remaining oil, add bay leaf, and chopped onions and cook it until becomes translucent.

STEP 5: Add the dried coconut and fry, now add lemon juice, peas, and carrots, and cook for 2 minutes. 

STEP 6: Add the cooked rice and mix well. Now add fried fish to the rice, give a nice mix, and garnish with coriander leaves.

STEP 7: Serve this super yummy Assamese Fish Fried Rice to your family.
