- 1 cup Ponni rice
- 2 tablespoons ghee or oil
- 1-inch cinnamon
- 2–3 green cardamoms
- 2–3 cloves
- 2–3 whole black peppercorns
- 1 tej patta (optional)
- 1 medium-sized onion, sliced (reserve some for garnishing)
- 1/2 teaspoon sugar
- 1.5 to 2 cups water
- Salt to taste
Instructions
- Rinse ponni rice 3-4 times and soak it in water for 20-30 minutes. Drain water.
- Heat ghee/oil in a pot, add whole spices, and fry until fragrant.
- Saute sliced onions until translucent, add sugar, and caramelize the onions.
- Reserve some caramelized onions for garnishing.
- Add drained rice, stir gently, and pour water. Add salt, and mix well.
- Cover and cook until rice is fully done and water is absorbed.
- Check during cooking; if needed, add a few tablespoons of hot water.
- Avoid stirring to keep rice grains intact. Cook covered for an additional 2-3 minutes.
- Fluff the rice and garnish with reserved caramelized onions.
