Drain and Delight: Parsi Brown Rice Recipe for Culinary Excellence

Ingredients

  • 1 cup Ponni rice
  • 2 tablespoons ghee or oil
  • 1-inch cinnamon
  • 23 green cardamoms
  • 23 cloves
  • 23 whole black peppercorns
  • 1 tej patta (optional)
  • 1 medium-sized onion, sliced (reserve some for garnishing)
  • 1/2 teaspoon sugar
  • 1.5 to 2 cups water
  • Salt to taste

Instructions

  • Rinse ponni rice 3-4 times and soak it in water for 20-30 minutes. Drain water.
  • Heat ghee/oil in a pot, add whole spices, and fry until fragrant.
  • Saute sliced onions until translucent, add sugar, and caramelize the onions.
  • Reserve some caramelized onions for garnishing.
  • Add drained rice, stir gently, and pour water. Add salt, and mix well.
  • Cover and cook until rice is fully done and water is absorbed.
  • Check during cooking; if needed, add a few tablespoons of hot water.
  • Avoid stirring to keep rice grains intact. Cook covered for an additional 2-3 minutes.
  • Fluff the rice and garnish with reserved caramelized onions.
