  • 3 tbsp ghee
  • 15 cashew
  • 2 tbsp raisins
  • 1 onion (sliced thinly)
  • 2 green chilli (slit)
  • 2.5 cup water
  • 1/2 tsp lemon juice
  • 1 tsp salt
  • 1 bay leaf 1-star anise
  • 1-inch cinnamon stick
  • 2 green cardamoms
  • 3 cloves
  • 1/4 teaspoon black peppercorns for tempering

Step 1: Rinse and Soak

Begin by rinsing the Basmati rice thoroughly in water until the water runs clear.

Soak the rice in plenty of water for 20-30 minutes, then drain and set it aside.

Step 2: Prepare Aromatic Base

In a deep pan or pot, heat 2.5 tsp of ghee and 2.5 tsp of cooking oil.

Add thinly sliced onions and sauté until they turn brown, then transfer them to a separate bowl.

In the same pan, fry cashews and raisins in 2.5 tsp of ghee until they turn golden, and set them aside as well.

Step 3: Toast Spices

In the same pan, add a mix of whole spices (cinnamon, cardamom, cloves) and sauté until aromatic.

Add half a teaspoon of cumin seeds (jeera) and cook for about 30 seconds.

Step 4: Toast Rice

Add the drained Basmati rice and one teaspoon of ghee to the pan.

Gently mix the rice until it is well coated with ghee and starts toasting, giving it a fluffy texture.

Step 5: Add Water and Season

Pour in 2.5 cups of water and add salt to taste.

Stir gently and add half a teaspoon of lemon juice for a tangy twist.

Step 6: Simmer

Close the pan and let the rice cook on low flame for approximately 10 minutes until it is tender and fluffy.

Step 7: Serve

Once the rice is ready, transfer it to a serving bowl.

Add the fried onions, cashews, and raisins mixture, and gently combine.
