Peanut rice

Ingredients

Scale
  • 1 tsp oil
  • 2 tbsp peanuts, roasted
  • 1 tsp urad dal
  • 1 tsp chana dal
  • ½ tsp cumin/jeera
  • 1 tsp sesame / til
  • 3 dried Kashmiri red chili
  • 2 tbsp coconut, grated

other ingredients:

  • 2 tsp oil
  • 1 tsp mustard/rai
  • few curry leaves
  • 2 tbsp peanuts
  • 2 cups cooked rice
  • ½ tsp salt

Instructions

 

Step: 1 First, in a pan heat 1 tsp oil and roast 2 tbsp peanuts, 1 tsp urad dal, 1 tsp chana dal, ½ tsp cumin, 1 tsp sesame, and 3 dried red chili.

Step: 2 roast on low flame till the spices turn aromatic.

Step: 3 Now add 2 tbsp coconut and roast for a minute.

Step: 4 cool the spices completely, and blend to a fine powder without adding any water. keep aside.

Step: 5 Now in a large kadai heat 2 tsp oil and splutter 1 tsp mustard, a few curry leaves.

Step: 6 Also saute 2 tbsp peanuts till they turn crunchy.

Step: 7 Now add 2 cups of cooked rice along with prepared masala powder and ½ tsp salt.

Step: 8 Mix well without breaking rice grains.

Step: 9 Cover and simmer for 5 minutes or till rice absorbs flavor completely.

Step: 10 Finally, serve peanut rice with raita or pack it in your lunch box.
