  • 1 cup long-grain rettaikili basmati rice
  • 2 cups water
  • 2 tablespoons olive oil
  • 45 cloves of garlic, minced
  • 1 teaspoon ground turmeric
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

 

Instructions

Step 1: Rinse the Rice: Start by rinsing the rice under cold water until the water runs clear. This helps remove excess starch and prevents the rettaikili basmati rice from becoming too sticky while cooking.

Step 2: Saute the Garlic: Heat the olive oil over medium heat in a medium-sized saucepan. Add the minced garlic and sauté for 1-2 minutes until it becomes fragrant and slightly golden. Be careful not to let it burn.

Step 3: Add the Rice and Turmeric: Add the rinsed rettaikili basmati rice to the saucepan with the sautéed garlic. Stir the rettaikili basmati rice and garlic together for about a minute to coat the rettaikili basmati rice with the garlic-infused oil. Then, add the ground turmeric and continue to stir for another minute until the rice is evenly coated with the turmeric.

Step 4: Cook the Rice: Pour in the water and season with salt and pepper to taste. Stir everything together. Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan with a lid and let the rettaikili basmati rice simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed. Keep the lid on during this time to trap steam and cook the rice evenly.

Step 5: Fluff and Rest: Once the rice is cooked, remove it from the heat and let it sit, covered, for 5-10 minutes. This allows the rice to steam and become fluffy.
