Pudina Rice

Ingredients

  • Boiled rice: Preferably long-grain basmati rice. Make sure to cook rice a few hours in advance if planning to use it in fried rice.
  • Cabbage: Though green cabbage tastes the best in this fried rice, purple cabbage can be used too.
  • Green peas: Fresh/ frozen. Fresh peas will take more time to get cooked. You can skip green peas if you want to make this dish with cabbage only.
  • Onion
  • Ginger
  • Garlic
  • Green chili peppers: Skip or de-seed to make it less spicy.
  • Spring onion greens
  • Fresh cilantro (optional)
  • Lime juice
  • Cumin seeds
  • Salt and pepper
  • Vegetable oil/ any other cooking oil

Instructions

Step 1: Rinse and Soak

Start by rinsing the Basmati rice thoroughly in water until the water runs clear.

Soak the rice in water for 20-30 minutes, then drain and set it aside.

Step 2: Prepare the Mint Paste

In a mixer, combine fresh mint leaves, fresh coriander leaves, green chilies, garlic, ginger, cumin seeds, and grated coconut (if using).

Add 1/4 cup of water and blend until you have a smooth paste. Set it aside.

Step 3: Heat Oil

Heat 2 tablespoons of cooking oil in a pressure cooker.

Step 4: Sauté Spices

Add a mix of whole spices (cinnamon, cardamom, cloves) and cumin seeds (jeera) for tempering.

Sauté until the spices release their aroma.

Step 5: Sauté Onions

Add thinly sliced onions to the oil and sauté until they turn a golden brown color.

Step 6: Add Mint Paste

Introduce the mint paste to the cooker along with turmeric powder and chili powder.

Mix well and cook for a minute, stirring occasionally.

Step 7: Add Tomatoes

Add chopped tomatoes to the mixture.

Mix well and cook for a minute, allowing the tomatoes to soften.

Step 8: Combine Rice

Stir in the soaked Basmati rice, ensuring it’s well coated with the mixture.

Step 9: Add Water and Salt

Pour in 2 cups of water and add salt to taste.

Gently stir.

Step 10: Pressure Cook

Close the pressure cooker lid and cook the rice in medium flame for 2 whistles.

Step 11: Fluff and Serve

Once done, gently fluff the rice with a fork.

Serve your Spicy Mint Rice garnished with fresh coriander leaves, and enjoy this flavorful delight with your family.
