Ingredients
· 2 cups cooked and cooled white rice (preferably day-old rice)
· 2 tablespoons vegetable oil
· 2 cloves garlic, minced
· 1 tablespoon fresh ginger, minced
· 1 cup mixed vegetables (e.g., peas, carrots, bell peppers), diced
· 2 green onions, chopped
· 2 large eggs, beaten
· 2 tablespoons soy sauce
· 1 teaspoon sesame oil
· Salt and pepper to taste
· Optional toppings: sliced green onions, sesame seeds, or chopped cilantro
Instructions
Step 1: Prep the Ingredients: Start by preparing all your ingredients. Cook and cool the rice in advance, as day-old rice works best for fried rice. You can also use freshly cooked rice, but make sure it has cooled down completely.
Step 2:Heat the Pan: Heat a large skillet or wok over medium-high heat. Add the vegetable oil and let it heat for a minute.
Step 3:Saute Garlic and Ginger: Add the minced garlic and ginger to the hot oil. Stir-fry for about 30 seconds until they become fragrant, but be careful not to burn them.
